Chef Randie's basa recipe

H ave you ever had jerk basa fillet with grilled tricolour bell peppers, red and white onion, with roasted fennel served on a bed of ginger orange couscous? This week, Rainforest Seafood's Chef Randie Anderson shares his recipe for the delicious treat. Basa is a type of catfish.

Ingredients

1lb Rainforest Seafoods Basa Fillet

1tbsp jerk seasoning

1 lemon, freshly squeezed

1tbsp fresh dill, chopped

onion, chopped fine

1tbsp ginger juice

Scallion leaves, chopped

1 sprig thyme

Salt and pepper to taste

2oz extra-virgin olive oil

Procedure

1. Season basa fillet with lemon juice and chopped dill and jerk seasoning, use a small amount and brush with light coat of olive oil.

2. Toss bell peppers, onion and fennel with a little olive oil, light enough just for coat.

3. Cook fish and vegetable separately on flat grill or frying pan until cooked.

4. Sautée chopped garlic, chopped onion, chopped scallion, and add the couscous and toss well. Add the orange juice, ginger juice and fresh thyme.

5. All the couscous is to be cooked and the liquid allowed to dry out somewhat. The couscous must be moist.

6. Plate couscous with basa and grilled vegetables, and serve with lemon iced.

Serves one.

BASA FISH FILLET-2

Ingredients:

* Lemon juice (squeeze two or three lemons) * Salt * Pepper * 3 crushed garlic cloves * Olive Oil * Flour * Bread Crumbs * 2 beaten eggs * 0.5kg (1 pound) of basa fish fillet

INSTRUCTIONSPreheat oven to 450F (230 degrees C)Mix the lemon juice, salt, pepper, garlic and olive oil into a bowlMarinate the fish in the bowl for 10-15 minutes to soak up all the flavorIn the meantime, grab three bowls and put bread crumbs in one, the eggs in another and flour in the last onePut the basa fish fillet in the bowl of flour, then the eggs and then the bread crumbs. This covers the fish with a nice coat of batter (very tasty!)Put the basa fish fillet on a baking sheet and bake for approximately 20 minutes (still at 450F)

Serving Tip: Same as above! A few slices of lemon can also add a nice touch (and you can sprinkle a bit more lemon juice on the fish!)

* 16 corn tortillas * 8 white fish fillets – I used Basa – but you can use tilapia, cat fish or halibut * 1 cup flour * 1 cup Mexican beer * 1 cup yogurt * 1 cup mayonnaise * 1 tablespoon minced shallots * 2 limes * 1 teaspoon garlic powder * 1 teaspoon cumin * 2 tablespoons chopped cilantro * Vegetable oil * 2 cups shredded green or red cabbage * 1 large tomato chopped * Salt

INSTRUCTIONSRinse and pat dry the fish. Cut each fillet into 4 strips. Place in a bowl and squeeze 1 of the limes, covering completely with juice. Set it aside for 15 minutes.In a bowl mix the flour and beer. Whisk well and season with salt. Set aside for 15 minutes.In another bowl mix together the yogurt, mayonnaise, the juice of the other lime, cumin, garlic and cilantro. Whisk until blended well and season with salt to taste.Fill a large skillet with oil and heat until the oil is very hot. Place the fish, one slice at a time, into the batter. Let the excess batter drip and place the fish in a single layer (work in batches). Fry the fish until evenly browned, turning once. Remove onto paper towels and drain off the excess oil.Place a tortilla on top of another one. Smear with yogurt sauce. Place two pieces of fried batter in the middle.
