Memories of Cathay cherished

Sixty-four years after leaving, I returned to visit Cathay, N.D. (population maybe 50). A lot of things ran through my mind during the three-hour drive from Fargo.

We grew up eating beef tongue, heart, liver, sweetbreads, ham hocks, and oxtail soup. Below-zero winter temperatures kept meat well into the spring in a metal box on the north side of our house. We had goats for milk and meat, chickens for eggs and meat, and rabbits for meat. The pair of rabbits dad bought multiplied, and mother canned 75 one fall. We had a large garden. Mother canned the vegetables that we didn’t eat during the summer. Crabapples and chokecherries from trees in our yard were used for jams and jellies.
